Healthy pancakes at Ube

🧾 Ingredients

120g of flour (white or semi-wholemeal)

1 tsp baking powder
-
1 egg
-
150 ml of milk (almond, oat or regular)

1 tablespoon of maple syrup or honey

1 tablespoon of neutral oil or melted butter
-
1 measuring spoon of Ube Laya (≈ 5 g)

1 pinch of salt
-
(Optional) ½ tsp vanilla
👩🍳 Preparation

In a bowl, mix the flour, yeast and salt.

Add the egg, milk, maple syrup, oil and vanilla.

Incorporate the Ube Laya and mix until you obtain a smooth, purple paste.

Heat a non-stick pan over medium heat.

Pour a small ladleful of batter to form each pancake.

Cook for 1 to 2 minutes: when bubbles appear, turn over.

Continue cooking for 1 minute.
🍓 Topping (healthy version recommended)

A few fresh raspberries or blueberries

1 tablespoon of Greek or plant-based yogurt

(Optional) a light drizzle of maple syrup

Just one spoonful of Ube Laya is enough for both color and taste.

For even fluffier pancakes, let the batter rest for 5 minutes.

Vegan version: replace the egg with 1 tbsp of applesauce.
