Healthy pancakes at Ube

Soft, naturally purple, light and delicious

🧾 Ingredients

  • 120g of flour (white or semi-wholemeal)

  • 1 tsp baking powder

  • 1 egg

  • 150 ml of milk (almond, oat or regular)

  • 1 tablespoon of maple syrup or honey

  • 1 tablespoon of neutral oil or melted butter

  • 1 measuring spoon of Ube Laya (≈ 5 g)

  • 1 pinch of salt

  • (Optional) ½ tsp vanilla


👩🍳 Preparation

  1. In a bowl, mix the flour, yeast and salt.

  2. Add the egg, milk, maple syrup, oil and vanilla.

  3. Incorporate the Ube Laya and mix until you obtain a smooth, purple paste.

  4. Heat a non-stick pan over medium heat.

  5. Pour a small ladleful of batter to form each pancake.

  6. Cook for 1 to 2 minutes: when bubbles appear, turn over.

  7. Continue cooking for 1 minute.


🍓 Topping (healthy version recommended)

  • A few fresh raspberries or blueberries

  • 1 tablespoon of Greek or plant-based yogurt

  • (Optional) a light drizzle of maple syrup


✨ Laya's Tips

  • Just one spoonful of Ube Laya is enough for both color and taste.

  • For even fluffier pancakes, let the batter rest for 5 minutes.

  • Vegan version: replace the egg with 1 tbsp of applesauce.
