🧾 Ingredients

120g of flour
-
80g of softened butter (or margarine)

60g of sugar (coconut sugar or brown sugar)

1 egg
-
1 measuring spoon of Ube Laya (≈ 5 g)

½ tsp baking powder
-
1 pinch of salt
-
(Optional) 40g of white or dark chocolate pieces

(Optional) ½ tsp vanilla
👩🍳 Preparation

Preheat the oven to 180°C .

In a mixing bowl, whisk the softened butter with the sugar.

Add the egg and vanilla, mix.

Incorporate the Ube Laya until you obtain a slightly purple paste.

Add the flour, yeast and salt.

Incorporate the chocolate pieces, if used.
-
Form into balls, place them on a baking sheet lined with parchment paper.

Bake for 10 to 12 minutes (cookies should still be soft in the center).
✨ Laya's Tips

For softer cookies, do not extend the baking time.

For a healthier version:

replace half the butter with almond puree.

White chocolate brings out the sweetness of the Ube.
