Cookies moelleux à l’Ube

Soft Ube cookies

Gently sweet, naturally purple, with a melting center

  • Quantity: 8 to 10 cookies


🧾 Ingredients

  • 120g of flour

  • 80g of softened butter (or margarine)

  • 60g of sugar (coconut sugar or brown sugar)

  • 1 egg

  • 1 measuring spoon of Ube Laya (≈ 5 g)

  • ½ tsp baking powder

  • 1 pinch of salt

  • (Optional) 40g of white or dark chocolate pieces

  • (Optional) ½ tsp vanilla


👩🍳 Preparation

  1. Preheat the oven to 180°C .

  2. In a mixing bowl, whisk the softened butter with the sugar.

  3. Add the egg and vanilla, mix.

  4. Incorporate the Ube Laya until you obtain a slightly purple paste.

  5. Add the flour, yeast and salt.

  6. Incorporate the chocolate pieces, if used.

  7. Form into balls, place them on a baking sheet lined with parchment paper.

  8. Bake for 10 to 12 minutes (cookies should still be soft in the center).


✨ Laya's Tips

  • For softer cookies, do not extend the baking time.

  • For a healthier version:

    • replace half the butter with almond puree.

  • White chocolate brings out the sweetness of the Ube.
